Watermelon Basil Mojito

Happy Fourth Of July! It’s unquestionably hot in Michigan today, with the thermometers shooting upwards of 95. It is however, a mid-summer and outdoorsy holiday, so we are enjoying the fresh air, sweat and all. The other day in my classic Mojito post, I was saying how a Mojito is my favorite drink to sip on a hot, hot day whilst sitting in an Adirondack chair. So for this special holiday, what would be better than a watermelon Mojito? Watermelon is definitely a favorite of Midwesterners during the summer and it makes a perfect addition to this fresh & sweet Mojito.

½ cup fresh watermelon chunks
1 oz fresh lime juice
1 oz simple syrup
4 basil leaves, plus sprig for garnish
1 ½ oz light rum
½ oz watermelon schnapps (optional)
splash of soda water
watermelon rind, for garnish

In a cocktail shaker muddle the watermelon with the lime juice, simple syrup, and basil leaves. Strain very well into a cocktail glass. Add the rum and watermelon schnapps, if desired. Top with crushed ice and the soda water. Stir well from the bottom up. Garnish with the basil sprig and watermelon rind and serve.

*This cocktail is easy to temper to your personal taste. You can omit the schnapps for a less “watermelon-y” taste, use less simple syrup to cut back on sweentness, omit the rum & schnapps for a booze-free version-whatever you like.
