The Leftovers…

Happy Thanksgiving! I hope you all are enjoying family, friends, and food. I wanted to list a few sandwich ideas to make with the leftover turkey meat.  I haven’t tried any of these, (our leftover turkey went to the freezer the next day) but I think they all sound delicious. Feel free to leave comments and share your favorite ways to transform leftovers from the big day!

 

Sandwich Combination Ideas

Fornetti’s Roast Turkey Sandwich
One of the sandwich inventions at Fornetti, part of a NYC food court called FoodParc.

toasted flatbread (pocket-less pita or naan)
roast turkey
tomato
lettuce
provolone cheese
sage mayonnaise (1 cup of mayo + 1 small bunch of sage minced)
fried onions

Delicatus’ Mudd Honey Sandwich
One of the 24 sandwiches on the menu at trendy Delicatus Deli in Seattle. The Mudd Honey Sandwich was the only one to achieve cult status.

soft Italian roll
roast turkey
horseradish aioli (in a mini processor or blender pulse 1 tablespoon chopped garlic, ½ cup horseradish, ½ tsp salt, and 1 tsp pepper.)
roast beef
white cheddar
thick cut bacon
bbq sauce (Kansas city style with a sweet + spicy tomato base)

* warm the sandwich in a 500° oven for 2 minutes, then drizzle with bbq sauce

Turkey Honey Avocado BLT
From San Francisco’s Urban Picnic.

red onion
tomato
avocado salsa (2 diced avocados, 2 tablespoons olive oil, 1 tablespoon lime juice, 2 tablespoons diced red onion, ¼ cup quartered grape tomatoes, 2 tablespoons minced cilantro, 1 minced jalapeno pepper, salt + pepper, combined)
honey
bacon + bacon aioli (bake 8 strips of bacon -2 per sandwich- in a 350° oven until crisp; save the drippings. Pulse 1 pasteurized egg yolk, 1 tablespoon Dijon mustard, 1 minced garlic clove, 2 tablespoons Sriracha, 1 tablespoons rice wine vinegar, and salt in a food processor. Whisk the drippings with enough olive oil to make ¾ cup. With the motor running, add the oil mixture until smooth)

Turkey Basil Panini

extra virgin olive oil (rub oil on bread, assemble sandwich and grill in a hot skillet with another pan pressing on the sandwiches)
