I asked my Aunt-in-law Jane for this recipe, she has made this on occasion when we visit Wisconsin. It is super easy to make, tastes delicious, and is easy to tweak to your own tastes. It is great to make when you have guests, and we have been making it when we have family stay the weekend. You can bake it the night before and reheat slices in the microwave or oven.
unbaked pie shell
2 tablespoons unsalted butter
1 cup chopped yellow onion
1 ½ cups (6 oz.) shredded Swiss cheese
1 ½ cups half & half
½ tsp. salt
1/8 tsp. cayenne pepper
¼ tsp. crushed red pepper (optional)
Heat oven to 425 degrees.
In skillet melt the butter over medium heat. Add the onions and cook 5 minutes or so until tender. Spoon the onions into the bottom of the pie shell. Layer the Swiss cheese over the onions. Beat eggs slightly; beat in remaining ingredients. Pour the egg/milk mixture into the pie shell. Place on a baking sheet and bake for 15 minutes at 425.
Reduce oven temperature to 325 degrees. Continue baking for about 25-30 minutes longer or
until knife inserted in center comes out clean. Let stand 10 minutes before cutting.
Variation: add cooked ham, crispy bacon pieces, or steamed broccoli florets along with the onions in the bottom of the pie shell.
