Strawberries, Kiwifruit & Cream

While I would generally love to stuff my face with a bowl of ice cream, or some sort of delectable and calorific pastry for dessert, I have cut a few things out of my diet lately, sugary desserts included. SO… when I get those cravings for sweets at night, I’ve been reaching for fruit instead. Let’s just say I’ve eaten plenty of strawberries lately. But what’s wrong with a dessert that consists of juicy red strawberries, bright green kiwifruit and homemade whipped cream? Absolutely nothing.  As I sit on the couch eating my strawberries and cream, I think to myself, “This is a simply delicious and acceptable dessert, who needs that salted caramel bread pudding with bananas?” Well, maybe tomorrow.

serves: 2

¾ pound of strawberries, hulled and quartered (or desired amount)
2 ripe kiwifruit, peeled and roughly chopped
½ cup heavy cream
2-3 teaspoons powdered sugar

In a small bowl whip together the heavy cream and sugar with an electric hand mixer until peaks form. Divide the strawberries and kiwi into 2 dishes and top with whipped cream.

*Ripened fruit should be sweet enough, but you can add some sugar to the fruit and let it sit for 5 minutes, if desired. Also, experiment with your homemade whipped cream; add extracts or liqueurs if desired!
