Hot chocolate, Irish cream and a little nip of peppermint? Sounds like a nice warm concoction for a cold night in December. I’ve been making this for years and I only drink it around the holidays, so it’s a special drink for a special time of the year. For an extra sinful indulgence you can use a cocoa mix that calls for milk (like Ghirardelli Premium Hot Cocoa) and milk, instead of water. However, my version is creamy enough for me. Crushed peppermint around the rim gives a nice extra hint of peppermint whilst sipping. Joyeaux Noel!

4 tablespoons hot cocoa mix (I use Nestle Dark Chocolate)
1 cup water
1 oz peppermint schnapps
2 oz Irish cream
simple syrup & crushed peppermint for rim
On a small rimmed plate pour a glug or two of simple syrup. On another, place some crushed peppermint. Dip the rim of your mug into the simple syrup and then the crushed peppermint.
In a small pot, bring the water to a simmer. Turn heat to low and whisk in hot chocolate. Add peppermint schnapps and Irish cream and swirl pan a few times, until mixture is nice and warm. Pour into prepared mug.
Sip with joy.
