Red Fruit Salad

Looking for a great way to use those juicy red strawberries and cherries? This is your recipe. 5 ingredients and only a few minutes of effort reward with a delicious and beautiful ruby fruit medley. The lemon zest adds a bright layer of flavor and the coriander will have tasters trying to place that mysterious flavor that fits beautifully in this recipe. This is delicious all by itself or, (my favorite) spooned over a scoop or two of vanilla bean ice cream. Thank you Carly for the recipe!

1 pound cherries, pitted
1 pound strawberries, cored
1 ¼ teaspoons ground coriander, or more to taste
2 tablespoons natural cane or brown sugar (or more to taste)
zest of half a lemon
a squeeze of fresh lemon juice

Tear or cut most of the cherries in half, and quarter the strawberries. Place them in a large bowl.

Stir together the coriander and sugar and sprinkle over the berries along with the lemon zest and squeeze of lemon juice. Stir a few times and let sit at least 10 minutes. It’s delicious the same day and also the next day, and the flavors have more time to marry and blossom.
