Pizza Week: Alison’s White Pizza

I love white pizza. Sometimes it’s just nice to forgo the red sauce and all the toppings and keep pizza simple and delicious. This is one of my favorite ways to do it- a garlicky olive oil base, a trio of melted cheeses, and a simple garnish of red pepper flakes and chives. This pizza is excellent with a mixed baby greens salad and a glass of wine.

amounts of cheese are approximate. Use enough cheese to almost cover the pizza in one layer. The cheese spreads well as it melts, so don’t worry if there are gaps between the different cheeses. (see picture below)

4 oz mozzarella cheese, sliced
2-3 oz fontina cheese, sliced
2-4 oz provolone cheese, sliced
sprinkle of shredded parmesan
extra-virgin olive oil
1 garlic clove, minced
sea salt
crushed red pepper
chives or scallions, sliced on the bias


Preheat oven to 500. On a large piece of parchment paper, roll out the dough into a 15” circle. Slide onto a pizza peel. Brush olive oil over the entire crust. Spread the minced garlic over the oiled crust, using a pastry brush to spread around. Sprinkle the crust lightly with sea salt. Top with the mozzarella, fontina, and provolone cheeses.

Bake for 8-10 minutes, or until cheese is bubbly and beginning to brown. Remove from oven and sprinkle with parmesan, crushed red pepper, and scallions.
