Harvest Salad

This is the perfect salad for celebrating the first days of autumn. Crisp, sweet apples, toasted walnuts, creamy avocado, tart cherries,  and tangy bleu cheese make for a delicious entrée or side salad with an explosion of flavors. We’ve eaten this three times since I made it for the first time two weeks ago.

serves: 4-6, as a small portion

½ cup chopped walnuts, toasted
mix of baby spinach and baby greens
½ cup dried cherries (or cranberries)
½ cup crumbled bleu cheese
1 apple, cored and roughly chopped (I used Honey Crisp)
1 avocado – peeled, pitted and diced
red onion, thinly sliced (optional)

2 tablespoons red raspberry jam (with seeds)
2 tablespoons red wine vinegar
1/3 cup walnut oil
freshly ground black pepper to taste
salt to taste

In a large bowl, toss together the spinach, baby greens, walnuts, cherries, bleu cheese, apple, avocado, and red onion.

Whisk together the dressing ingredients and pour over the salad just before serving. Toss to coat.

    I made this salad for our Easter lunch. My family loved all the flavors this salad offered. I especially enjoyed how easy the dressing was to make. Yummy!!
