These cucumber bites are tasty, easy to prepare, and can be made ahead of time. The coolness of the cucumber pairs well with the feta’s tangy creaminess and the bright taste of the fresh herbs. Serve with other Mediterranean fare like crispy pita chips and hummus or all by themselves. (I had to adjust the amount of filling from the original recipe. There wasn’t nearly enough to fill the large cucumbers I had.)

Serves 8 as an appetizer
2 cucumbers, chilled & peeled
1 cup Greek feta, crumbled
2 tablespoons Vegenaise or canola mayonnaise
4 drops or so of Worcestershire sauce
2-3 tsp fresh mint, minced
2-3 tsp fresh dill, minced
½ tsp kosher salt
½ tsp ground pepper
1-2 tablespoons fresh parsley, minced
Slice off the ends of the cucumbers and slice the cucumbers in half lengthwise. Scoop out the seeds and centers. Mash together the feta, mayo, Worcestershire, mint, dill, salt and pepper until well combined. Taste and adjust seasonings to your liking. Stuff cucumbers with the cheese mixture, sprinkle with parsley, and refrigerate to set.
Cut stuffed cucumbers into pieces and serve.
