This drink pre-dates Prohibition and is named for the old Philadelphia mens club of the same name. It tastes fresh, crisp and sweet all at the same time. Shaking the cocktail longer than normal ensures that the egg white emulsifies and thus creates the beautiful foam on top. I usually have these ingredients on hand, so I make this often. Not to mention the fact that I love it. I have also cheated and substituted fresh lime juice for the lemon juice and I like that version even more; but in the interests of keeping this cocktail around for future generations, I’ve given you the traditional recipe.
