Chocolate, Butterscotch and Peanut Clusters


My mother-in-law makes these delicious bite-sized desserts and they are simply addicting. You can usually find David and I hovering around a bowl of these at his parent’s house. I really think it would be impossible to eat just one, and it’s never happened.  You have to eat 3 or 4, or 10. These are delicious all year round, but they would make great additions to an Easter basket or a Christmas goodie box. The best part about them (besides the taste) is that they only have 3 ingredients are very easy to make. Melt, Stir, Scoop and Share the goodness.

makes: 2 baking sheets of clusters

1 twelve ounce bag semi-sweet chocolate chips
1 twelve ounce bag butterscotch chips
1 can cocktail peanuts


Line 2 baking sheets with wax or parchment paper.

Set a large glass or heat-safe bowl over a smaller pot of gently simmering water. Add the semi-sweet and butterscotch chips and stir until completely melted and smooth. Add the peanuts and stir until combined. Turn off the heat and remove the bowl from the pot.



Using a spoon or a small cookie scoop, scoop little mounds of the mixture onto the prepared baking sheets. They don’t spread or expand, so you can place the clusters close together.


Place the pans in the refrigerator until the clusters are set.


Store in an air-tight container in the refrigerator.
