Buffalo Chicken Wraps with Baked Russet Fries


My favorite pub food is either buffalo wings or a buffalo chicken wrap with the usual blue cheese, celery, and lettuce. These are very easy to make at home, you don’t even need a recipe. Just put everything in a large tortilla and roll it up. Done. I get fried chicken fingers from the Holiday Market near us, but any fried or grilled chicken strips will do. The fries take a little more work, but they are a great alternative to “fried” fries. I make them all the time. Feel free to serve with kettle chips instead.

2 large flour tortillas

4 or 5 chicken strips, roughly chopped
1 stalk of celery, sliced
romaine lettuce mix
sliced red onion
blue cheese dressing (I use Marzetti Simply Dressed Blue Cheese-in the refrigerated section of produce  dept.)
hot sauce (I use Franks Red Hot Original)


1 russet potato (skin on) sliced into fries
olive oil
sea or kosher salt

For the fries


Preheat the oven to 400 degrees. While the oven is preheating, let the fries soak in a bowl of cold water for 15 minutes. Drain the potatoes and pat dry with a paper towel.

Toss the potatoes with enough olive oil to coat, then spread evenly on a rimmed baking sheet. Sprinkle with salt. Bake for 25 to 25 minutes, or until evenly browned with crispy edges. Stir/flip the fries halfway through baking time. Season with more salt if needed and serve immediately.

For the wraps


Place the chopped chicken in a bowl and toss with enough hot sauce to generously coat.

Roll the tortillas in parchment paper and microwave for a few seconds until warm and pliable. Lay the tortillas on a work surface and in the middle of each tortilla place lettuce, chicken, celery, red onion, and blue cheese (or ranch) dressing and extra hot sauce to taste. Wrap into a burrito and slice in half on the diagonal. Serve with the baked French fries.
