BLT-A’S

 

I am a sucker for diners, especially the small, family-owned kind with the shiny vinyl stools. If you ever have the good luck to find yourself on Euclid Avenue in Cleveland, stop in Sammy’s Grill and have a good ol’ cheeseburger, fries, and a can of coke at this little piece of diner heaven. Cheeseburgers aside, BLT’s are another popular diner menu item. If you take the classic sandwich, add avocado and stuff all of the regular goodies inside two grilled, parmesan-encrusted pieces of sourdough it takes this sandwich from good to delicious. Serve with an old fashioned chocolate soda, shake, or a beer.

I’ll just list the general ingredients, although I would say use at least 2 pieces of bacon per sandwich.

good quality sourdough bread
butter
grated parmesan
green leaf lettuce
sliced tomatoes
bacon
mayo or Vegenaise
sliced avocado

Cook the bacon on an electric griddle set to 350, a grill pan, or in a skillet until browned and crispy. Set aside on a few layers of paper towels. Discard the bacon grease from the griddle or skillet and wipe clean.

Slice the tomatoes, avocado, and prepare the lettuce.

Butter the bread on one side and top with a layer of grated parmesan. (about 2 teaspoons per slice) Pat the parmesan into place so it will stick to the butter. Place bread cheese side down on the griddle (still at 350), or do a few pieces at a time in a skillet over medium high heat.  Cook until the cheese and butter side is golden brown and crispy, (1-2 minutes) remove from heat.


Assemble sandwiches any way you please. Spread your mayo or Vegenaise (I love this stuff, tastes the same to me without the extra cholesterol), top with 2 pieces of crispy bacon, lettuce, tomato, and avocado. Slice on the diagonal and if desired insert a toothpick to hold sandwich together. Serve immediately.
