Avocado Toast

Have you ever had avocado toast? If not, you must have some. It’s the best thing ever to put on sliced bread. Avocados are one of my favorite foods because I love the way they taste, they have so many health benefits, and they are so versatile. You could mash the avocado if you choose, but I think it looks prettier when you leave it sliced. This makes for a yummy breakfast or a pick-me-up snack for late afternoon.

serves: 1-2

2 slices multigrain, sourdough, or bread of your choice, toasted
1 avocado, sliced*
extra-virgin olive oil
half of a small lemon
sea salt
crushed red pepper flakes

Fan avocado slices on toast and squeeze some of the lemon juice on top. Drizzle with olive oil and season with salt and red pepper to taste.

*This is the way I prepare avocado- holding the avocado in your hand slice lengthwise all the way around the avocado with a long knife and gently twist the halves to separate. Holding the half with the avocado pit up lengthwise, hit the pit with the blade just hard enough to wedge into the pit and edge it out. With a larger spoon, scoop out each half of the avocado in one fell swoop and place on a cutting board. Slice the avocado (or continue with whatever preparation is needed).
