Happy Valentine’s Day!

Oreos are pretty great by themselves, but when you crush them, mix them into a yummy buttercream frosting and swirl them onto a vanilla cupcake they become part of something that you should definitely eat on Valentine’s Day!

makes: 12 cupcakes

cupcakes:

1 ½ cups cake flour
1 teaspoon baking powder
¼ teaspoon salt
1/3 cup unsalted butter, room temperature
2/3 cup + 3 tablespoons sugar
1 large egg
1 teaspoon vanilla extract
½ vanilla bean, seeds only
2/3 cup whole milk

Preheat the oven to 300 degrees.

Line 12 muffin tin cups with paper liners.

Sift flour, baking powder and salt together in a medium bowl.

In an electric mixer, or large bowl, beat the butter until light and fluffy and then gradually add the sugar and mix well.

Beat in the egg until blended, then beat in the vanilla extract.

Slice the vanilla bean in half, lengthwise and scrape out the seeds with a paring knife. Discard the husk. Measure the milk into a small container and add the vanilla seeds.

Add the flour mixture and milk to the mixer alternately in 3 intervals, starting and ending with the flour mixture. Blend gently until smooth.

Using a cookie scoop, distribute the cupcake batter evenly among the cupcake liners.

Bake for 10 minutes, rotate, and bake for 12-14 more minutes or until a toothpick inserted in the center comes out clean. Place the pan on a wire rack and cool completely.

Cookie Buttercream Frosting

1 cup unsalted butter, room temperature
1 ½ cups confectioner’s sugar
3-4 tablespoons crushed chocolate cookie bits, filling removed (recommended: Oreos)
1 ½ teaspoons vanilla extract

In an electric mixer, or large bowl, beat the butter and shortening on medium speed until creamy.

In a separate bowl, sift the confectioner’s sugar. Add the confectioner’s sugar and crushed cookie bits to the butter mixture on low speed until it begins to incorporate. Add the vanilla extract, and beat at medium to high speed until fully incorporated.

Pipe or spread the frosting onto the cupcakes. Sprinkle more chocolate cookie crumbles atop the frosting if desired or top with a halved cookie.
